Banana Chai Bread (serves 12)

225g plain flour
1 tbsp baking powder
½ tsp salt
150g caster sugar
110g light cream cheese
2 eggs
170g mashed bananas
4 tbsp brewed Chai tea, room temperature


1)    Preheat oven to 180C / gas mark 4. In a medium bowl mix the flour, baking powder and salt.
2)    In a separate bowl, mix the sugar, cream cheese and eggs until light and fluffy. Mix mashed bananas and Chai into the cream cheese mixture. Add the flour mixture and mix until smooth
3)    Bake in the oven for 60 minutes. Cool on a wire rack. Remove from the tin after to minutes
